CHICKEN CASSEROLE

 

1 chicken or 4 chicken breasts

1-cup sour cream

1 can cream of chicken soup

1 stick butter

1 ½ cups cracker crumbs

3 tablespoons poppy seeds

 

Boil chicken until tender.  Remove from bone and chop.  Mix sour cream,

cream of chicken soup with the chicken and pour into casserole.

 

In another pan, melt the butter and add the bread/cracker crumbs. 

Sprinkle this mixture and 3 tablespoons of poppy seeds over chicken. 

Bake at 350 degrees for 30 minutes.

Tuna Casserole for Two

 

1 small can evaporated milk                                                               

1 can whole kernel corn

1 cup crumbled soda crackers                                 

1 tablespoon instant onion

1 tablespoon instant parsley flakes                        

1/8 teaspoon oregano

1 tablespoon lemon juice                                                    

1 (6 ½ oz) can tuna (oil)

Pour evaporated milk over crackers in a bowl; let stand to soften. 

Stir in corn, onion, seasoning, lemon juice and tuna.  Turn into two

1-pint casseroles.  Sprinkle with paprika.  Bake at 375 for 20 minutes.

Chicken w/Dressing Casserole ( Odell DeShazo –2001)

 

2 cups cooked chopped chicken (1 canned whole chicken can be used)

2 cups white bread crumbs

2 cups cornbread

3 tablespoons butter or margarine

1 medium onion chopped

3 tablespoons celery (chopped)

2 eggs (beaten)

2 chicken bouillon cubes dissolved in 2 cups of hot water or 2 cups chicken broth

2 teaspoons poultry seasoning

Salt and pepper to taste

 

Sauté onions and celery in butter until clear.   Mix bread with water and bouillon

cubes.  Mix thoroughly.  Add well-beaten eggs, onions, celery and seasoning.  Pour

into buttered casserole dish.  Put chopped chicken on top of dressing:  Arrange so

light and dark meat are evenly distributed.  Make a white sauce of:

 

¼ tablespoons margarine or butter

2 tablespoons flour

2 cups milk

Salt and pepper to taste

Pour mixture over 2 well-beaten eggs

Pour over chicken and dressing

Cover with buttered breadcrumbs

Bake at 375 degrees for 30 minutes
